In this Thursday's weekly networking session, we will be joined by Dr Emma Garnett from Cambridge Institute for Sustainability Leadership.

The steaks are high: what approaches work to increase vegetarian sales and reduce meat consumption? The Planetary Health diet recommends approximately 16kg of meat per person per year for a healthy and sustainable diet for 10 billion people. In the UK, average meat consumption is five times this level at 80kg. Shifting to more plant-based diets is key to mitigating climate change and improving population health, but very few studies have long-term data on which strategies could effectively lower meat consumption.

During this session, Emma will introduce and explore her long-term observational and experimental studies in five University of Cambridge college cafeterias to test different approaches to increase sales of vegetarian meals. These studies produced data from 1142 mealtimes and 213,627 meal selections, resulting in some expected and unexpected results that Emma will highlight and discuss with us.
